the Hearthstone restaurant has a gluten-free menu and is really accommodating for substitutions of veggies for starches. They also have elk on the menu as well as some other wild game.
Ember is amazingly creative food and catered my wedding with an entirely primal menu. They also have a bread basket substituted with papadoms (indian lentil crisps). They also offer wild game from time to time.

Empire Burger has a bison burger and all of their beef is anti-biotic and hormone free. It is a little pricey, especially if you are not going to have a bun.
Mi Casa is owned by the same people as the Hearthstone and also offers gluten-free meals.

Natural Grocers is about 20 minutes away in Silverthorne, Colorado. They have all organic produce, great snack and meat selection and everything else you could ever want from a health food store!
